Description
Chinese artichokes (Stachys affinis), also known as knotroot or chorogi. The edible bits seen here are tubers, storage and reproductive structures that grow with the roots in the soil. The Chinese artichoke can be eaten either raw or cooked. It is native to Japan and China, and was introduced to Europe in 1882 to the village of Crosne, France.
