Description
Scanning electron micrograph (SEM) of a milk fat droplet. Depending on the mammal, milk contains between 2 and 50% fat. In humans and cows, the fat content is around 4%. Fat droplets are finely distributed as an emulsion in the watery portion of the milk. Many substances adhere to the fat droplets, including proteins and antibodies. Over time, the fat droplets drift up and float on the surface to form cream. Magnification is 28,000x at 15x12cm image size.
