Close up of a mature wheat crop. Wheat (Triticum) is a grass, originally from the Fertile Crescent of the Near East, but now cultivated worldwide. Annual wheat production worldwide is 600 million tons, making it the third most-produced cereal grain after maize and rice. Wheat is a staple food used to make flour for breads, biscuits, cookies, cakes, breakfast cereal, pasta, noodles, and for fermentation to make beer. The Palouse region in Idaho and western Washington is a major wheat producing area of the United States.
