Artist's Description

Streptococcus thermophilus bacteria, along with Lactobacillus bulgaricus, converts milk into yogurt by oxidizing the milk sugar, lactose, into lactic acid. Their temperature optimum is at about 40?C, thus they are called "thermophilic". They are part of bacterial starter culture. Enhanced SEM. Image width 6.4 micrometers. Magnification 15,625x if the image is printed 10 cm wide.
